Twice - Baked Potatoes


Twice - Baked Potatoes - a delicious alternative to mashed or baked potatoes!

Twice - Baked Potatoes Recipe

INGREDIENTS:

  • 1 large potato per person
  • milk to mix 1 egg butter
  • 1/8 tsp (.5ml) ground black pepper
  • green onions - finely chopped (1 - 2)
  • Parmesan cheese
  • pinch of Paprika per potato
  • salt to taste
  • METHOD:

    Wrap potatoes in foil and bake until done in hot oven (375°F or 190°C for at least one hour, turning after 30 minutes)

    Allow to cool and then halve and scoop out potato, leaving skin intact.

    Mash potato with milk, egg, butter, black pepper and green onion (quantity to taste)

    Scoop mashed potato back into potato skins, rough up the tops to make peaks.

    Sprinkle with Parmesan cheese and dust a little Paprika on top.

    Bake at 400°F or 200°C for 20 - 30 minutes until top starts to brown - you can broil for the final 2 minutes to brown perfectly.
