Turkey Pizza with Broccoli


A great way to use up left-over turkey, this pizza is delicious and so easy to make.

Turkey Pizza with Broccoli Recipe

INGREDIENTS:

 

  • 12 inch (30 cm) pizza shell
  • 2 cups (475 ml) cooked white turkey meat in bite-size pieces
  • 1½ cups (355 ml) broccoli florets, lightly steamed
  • 8 white button mushrooms, sliced
  • 1 sweet pepper (red or yellow), cut into slivers
  • 3 shallots, chopped finely
  • 2 cloves garlic, minced
  • Salt and ground black pepper to taste
  • 1½ tsp (7 ml) fresh rosemary leaves, slightly chopped
  • 4 - 5 fresh basil leaves, shredded
  • 1½ tsp (7 ml) fresh oregano, chopped
  • 12½ oz (350 gm) grated mozzarella cheese
  • Parmesan cheese

METHOD:

If using home made pizza dough for the shell, stretch to fit a lightly oiled pizza pan and pre-bake for 10 - 12 minutes at 375°F or 190°C, until firm but not browned.

Sauté the shallots and garlic in olive oil until softened and then add the mushrooms and continue to cook for a few minutes more. Add the turkey, sweet pepper, herbs and seasonings, stir carefully and remove from the heat.

Spread the mixture evenly over the pizza shell and mix in the broccoli.

Top with grated mozzarella and sprinkle the top with Parmesan cheese.

Bake in the top half of oven at 425°F or 220°C for 10 to 12 minutes until the cheese is golden-brown on top.
