Turkey Lasagna with Bacon and Broccoli


A superb lasagna recipe that is a great way to use up leftover turkey.

Turkey Lasagna with Bacon and Broccoli Recipe

INGREDIENTS:

  • 1 pound (454 gm) leftover turkey, dark and light meat, finely diced
  • 4 rashers of ham-style bacon, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red pepper, diced
  • 2 tbsp (30 ml) olive oil
  • 28 fl.oz. can (796ml) plum tomatoes
  • 14 oz can (400ml) tomato sauce
  • 5.5 oz.can (160ml) tomato paste
  • 1½ tsp (7ml) dried oregano
  • 1 tsp (5 ml) dried basil
  • salt and black pepper to taste
  • 450 grams (16 oz) ricotta cheese
  • 1/2 cup (50 gm) grated parmesan cheese and extra for topping
  • 2 eggs, beaten with 1/2 cup milk
  • 340 gm (12 oz) fresh broccoli flowers, cut into ½" slices and blanched by steaming for 5 minutes over boiling water
  • 375 grams of Mozzarella cheese, grated
  • 16 lasagna noodles, oven-ready type
  • METHOD:

    Saute onion in olive oil, add garlic and red pepper, followed by turkey meat and bacon.

    Add tomatoes and their liquid and mix well, cutting tomatoes into chunks with spoon.

    Stir in tomato sauce and paste, oregano, basil, salt and pepper and bring to a boil.

    Stir occasionally and simmer on low heat for 30 minutes, uncovered.

    Preheat oven to 350°F or 180°C.

    Mix ricotta and 1/2 cup parmesan cheese, in a bowl.

    Add egg and milk mixture and stir well. Set aside.

    In un-greased 9" x 12" (approx 24cm x 30cm) lasagna pan or rectangular oven-proof dish, layer 4 noodles, followed by some meat sauce, then four more noodles, then broccoli, then ricotta cheese mixture.

    Top this with more noodles, a layer of meat sauce and a final layer of noodles.

    Complete the lasagna with a thin layer of meat sauce and the grated mozzarella cheese with a final topping of grated parmesan cheese.

    Bake, uncovered for 45 - 60 minutes.

    Allow to cool for 10 minutes before serving.

    Serves 6.
