Quick Raisin Pudding


A very delicious pudding, much in the British style, that has the taste and texture of true steamed puddings without all the fuss and long cooking time.

Quick Raisin Pudding Recipe

INGREDIENTS:

  • 2 cups (240 gm) all purpose plain flour
  • 4 tsp (20 ml) baking powder
  • 1/4 tsp (1.5 ml) salt
  • 4 tbsp (60 ml) margarine or butter
  • 2 cups (100 gm) raisins
  • 1 cup (8 fl.oz) milk
  • Syrup:

  • 1/2 cup, packed (85 gm) light brown sugar
  • 2 tbsp (30 ml) margarine or butter
  • 3½ cups (28 fl.oz) boiling water
  • METHOD:

    Preheat oven to 375°F or 190°C

    Sift the flour, baking powder and salt together and then cut in the margarine or butter.

    Stir in the raisins and then make into a dough using milk.

    Spread the dough in a large baking dish and pour the syrup over it.

    Bake for 40 minutes until risen and top has browned nicely.
