Mexican Pork Chops


Our latest Mexican style recipe! Pork chops with a great twist, thanks to the addition of spirally Cavatappi pasta. This is a great meal - all in one pot!

Mexican Pork Chops Recipe

INGREDIENTS:

  • 4 lean pork chops, fat trimmed
  • 1 red pepper, chopped
  • 2 medium onions, chopped
  • 28 oz can Italian tomatoes (796ml)
  • 3/4 cup (175 gm ) plain yogurt
  • 1 tbsp (15 ml) honey
  • 1 can red kidney beans (400ml), drained
  • 1 tbsp (15 ml) olive oil
  • 3 tbsp chili powder (30ml)
  • 2 cups (200 gm) Cavatappi pasta (uncooked) or macaroni-style noodles
  • 1 cup (125 gm) frozen sweet corn (optional)
  • METHOD:

    Sauté pork chops in oil in a large skillet until browned and set aside.

    Add onions and red pepper and cook for five minutes more until onions are tender.

    Add all other ingredients, including uncooked pasta except the kidney beans.

    Heat to boiling and then cover and simmer on low heat for 40 minutes, stirring occasionally.

    Stir in kidney beans and thawed sweet corn and simmer about fifteen minutes longer until corn is tender.
