English gingerbread is an old-fashioned favourite that is still enjoyed by kids today! This is a soft spongy gingerbread, rather than the cookie-type that is used for gingerbread houses.

INGREDIENTS: |
METHOD: Heat oven to 325°F or 160°C. Grease and flour a 13x9x2" baking pan. (33x23x5 cm) Sift together the flour, baking soda, spices and salt and set aside. Cream butter in a large mixer bowl with the sugar, add eggs and beat until smooth and fluffy. Beat in the molasses and hot water at low speed and then gradually add the flour mixture, beating until smooth. Pour into the baking pan and cook for 35 - 40 minutes until a toothpick inserted in the middle comes out clean.
