Herbed Roasted Cornish Game Hens


I've always loved Cornish Game Hens as a special treat and as a change from chicken. I find they have a much deeper flavour, tasting more like game birds. This recipe requires a minimum of time to prepare and the roasted game hens taste fabulous - good enough for Thanksgiving or Christmas!

Herbed Roasted Cornish Game Hens Recipe

INGREDIENTS:

  • 2 Cornish game hens
  • 1 medium onion
  • 2 tbsp (30 ml) butter
  • 2 tbsp (30 ml) olive oil
  • 1 tsp (5 ml) granulated garlic
  • 1 tsp (5 ml) dried thyme
  • 1/2 tsp (3 ml) dried marjoram
  • salt and fresh ground black pepper
  • METHOD:

    Preheat oven to 350°F or 180°C

    Lightly salt the cavities of the birds and truss the legs together.

    Place on a rack in a shallow roasting pan.

    Peel the onion, cut into large pieces and place around the hens in the pan.

    Brush the birds with the olive oil and then sprinkle on the herbs and garlic, followed by the salt and black pepper.

    Cut the butter into small cubes and place in the pan with the onions.

    Cover the roasting pan securely with foil, ensuring that it doesn't touch the game hens.

    Bake for 50 minutes, then remove the foil, baste and return to the oven.

    Baste frequently while cooking for at least another 30 minutes until a meat thermometer inserted into the thickest part of the meat registers 180°F or 82°C.

    Allow to rest for 10 minutes or so before serving.

    Discard the onion and use the pan juices as the basis for your gravy.
