A quick and easy tomato chutney that can be made minutes before a curry, or any other meal as a side dish.

INGREDIENTS: |
METHOD: Combine tomatoes, all spices, and onion in blender until finely chopped. Pour into saucepan and add remaining ingredients. Simmer uncovered until thickened - if you do not reduce the liquids long enough the chutney will be runny. Store excess in glass jars in refrigerator.
Best made a day or so ahead, but still acceptable if you make it along with your curry, etc.
