Quick Tomato Chutney


A quick and easy tomato chutney that can be made minutes before a curry, or any other meal as a side dish.

Quick Tomato Chutney Recipe

INGREDIENTS:

  • 28 oz (796ml) can tomatoes or 3 - 4 large fresh tomatoes
  • 1 small onion, chopped
  • 1 hot green chili
  • 1 tsp chili powder (5ml)
  • 1 clove garlic
  • 1 tsp salt (5ml)
  • 1" (2.5 cm) chunk ginger root
  • 1/2 cup ((120 gm) white sugar
  • 1/2 cup (125ml) cider vinegar
  • 1/2 cup golden raisins (125 gm)
  • METHOD:

    Combine tomatoes, all spices, and onion in blender until finely chopped.

    Pour into saucepan and add remaining ingredients.

    Simmer uncovered until thickened - if you do not reduce the liquids long enough the chutney will be runny.

    Store excess in glass jars in refrigerator.

     

    Best made a day or so ahead, but still acceptable if you make it along with your curry, etc.
