Baked Cauliflower au Gratin with Red Peppers


A variation on cauliflower au gratin that the whole family will love!

Baked Cauliflower au Gratin with Red Peppers Recipe

INGREDIENTS:

  • 1 cauliflower head, washed and divided into individual florets
  • 1 red pepper, diced
  • 4 green onions, diced
  • 1 cup (140 gm) grated Cheddar cheese
  • 1 cup (80 gm) breadcrumbs
  • 1/2 tsp (3 ml) ground pepper
  • 1/2 tsp (3 ml) salt
  • METHOD:

    Steam the cauliflower and red pepper until tender, drain and arrange in an oven-proof container with the green onion.

    Mix together the cheese, breadcrumbs, salt and pepper and spread over the vegetables.

    Bake at 400°F or 200°C for 15 minutes or so until browned.
