Bumbleberry Crisp


The term 'Bumbleberry' refers to a mixture of various fruits; generally blueberries, blackberries, raspberries and strawberries in any desired combination. Frozen mixed fruits work very well for this delicious recipe but you can use fresh fruit that is in season.

Serve with ice cream or any other desired topping.

Bumbleberry Crisp Recipe

INGREDIENTS:

  • 24 oz (700 gm) mixed berries
  • 1/4 cup (2 oz - 56 gm) white sugar
  • 1 cup (4 oz - 110 gm) white flour
  • 1 tbsp (15 ml) lemon juice
  • 3/4 cup (1½ oz - 45 gm) oats (not instant oats)
  • 2/3 cup (4½ oz - 132 gm) brown sugar
  • 1 tsp (5 ml) ground cinnamon
  • 1/2 tsp (3 ml) ground ginger
  • 1/2 tsp (3 ml) nutmeg
  • 1/4 tsp (1 ml) salt
  • 7 tbsp (3½ oz - 100 gm) butter
  • METHOD:

    Preheat oven to 375°F or 190°C.

    Combine the berries with the white sugar, a quarter of the flour and the lemon juice.

    (If you are using frozen berries, they can be used straight from the package, but will require about 20 minutes additional cooking time)

    Mix well and transfer to a lightly greased baking dish (approx 9 " round)(23 cm)

    In a bowl combine all the remaining dry ingredients, except the oats.

    Cut in the butter until the mixture resembles fine breadcrumbs.

    Stir in the oats till mixture starts to clump together in small lumps.

    Sprinkle over the berries to cover.

    Bake for approximately 30 - 40 minutes until topping is golden-brown.
