No need to buy packaged coating mixes, this recipe shows you how to make your own in minutes!

Breaded Chicken Breasts Recipe


  • 1 boneless, skinless chicken breast per person
  • 2 eggs, beaten
  • 1 cup (128 gm) flour
  • 4 cups breadcrumbs (360 gms)
  • 1/2 tsp (3ml) curry powder
  • 1 tsp (5 ml) garlic powder
  • 1 tsp (5 ml) dried oregano
  • 1/2 tsp (3 ml) salt
  • pepper to taste
  • olive oil and melted butter to lightly coat

    Put flour into a small bowl, eggs into a second bowl and then in a larger third bowl mix together the breadcrumbs and the curry, garlic, oregano and salt and pepper. The chicken breasts are firstly dredged in the flour to coat them evenly and then dipped in the beaten egg. Finally roll each chicken piece in the breadcrumbs and lightly press the breadcrumb coating to the chicken to make it adhere. Place the chicken in a greased oven-proof dish and coat lightly with olive oil and butter. Bake at 350°F or 180°C for about 40 minutes. Serve with Spicy Barbecue Sauce for dipping.
