Banana Oatmeal Cookies


These Banana Oatmeal Cookies are a perfect way to use up over ripe bananas, and have the added flavour of coconut. Simple and quick to make, they're sure to be an instant hit with the kids!

Banana Oatmeal Cookies Recipe

INGREDIENTS:

  • 4 tbsp (60 ml - 2 oz) butter
  • 1 cup (225 gm - 8 oz) white sugar
  • 1 cup (200 gm - 7 oz) brown sugar
  • 2 over-ripe bananas
  • 2 large eggs
  • 2 tsp (10 ml) vanilla extract
  • 2 cups (220 gm - 7½ oz) all-purpose white flour
  • 1 tsp (5 ml) baking powder
  • 1 tsp (5 ml) baking soda
  • 1 tsp (5 ml) ground cinnamon
  • 1/2 tsp (3 ml) salt
  • 3 cups (225 gm - 9 oz) oatmeal flakes - not instant
  • 2 cups (200 gm - 7 oz) grated dried coconut
  • METHOD:

    Preheat oven to 350°F or 180°C.

    Sift together the flour, baking powder, soda, cinnamon and salt.

    Stir in the oatmeal and coconut. Set aside.

    Cream the butter and sugars together until smooth.

    Beat in the bananas, eggs and vanilla.

    Gradually mix in the dry ingredients, until combined.

    Using a spoon, drop mounds of the batter onto a well-greased baking tray, allowing room for expansion. (about 2" - 5 cm mounds)

    Bake in batches for 12 - 15 minutes.

    Allow to cool before removing from the baking tray.

     

    Makes about 48 cookies.
