Best Yorkshire Puddings

olive oil or butter

2 eggs (must be at room temperature)

2 cups milk (500ml)

2 cups flour (284 gm)
(for best results use at least 1 cup 'Best for Bread' flour)

salt, pepper or seasoning to taste



Pour oil, butter, or drippings from roast beef into containers (ceramic ramekins give great results!) and heat in oven with main course.

Lightly beat eggs, add milk and lightly beat in the flour and seasonings

Pour into hot containers and bake at 375°F or 190°C. for about 30 minutes. Yorkshires should puff up and are ready when golden-brown.

For Toad-in-a-Hole: pour Yorkshire mix over sausages in greased large baking dish and bake till done.
