Toad in a Hole


6 - 8 precooked beef sausages (Johnsonville Brats are recommended)
olive oil or butter
2 eggs (must be at room temperature)
2 cups milk (500ml)
2 cups flour (284 gm) (for best results use at least 1 cup 'Best for Bread' flour)
salt, pepper or seasoning to taste



Preheat baking dish in oven for about 10 minutes with 2 tsp (10 ml) olive oil and 2 small pats of butter.
Lightly beat eggs, add milk and lightly beat in the flour and seasoning.
Swirl the oil mixture to coat the dish and then place the sausages in it, pour the batter over the sausages and bake at 375°F or 190°C.

Bake until batter is golden brown and firm - test for interior doneness with a skewer.

Serve with gravy and lots of mashed potatoes.
