Teriyaki Sweet Potatoes with Cilantro


3 large sweet potatoes, peeled and cut into 2" (5 cm) pieces

1/2 cup Teriyaki sauce

1/3 cup cilantro, washed and chopped

salt and pepper to taste

olive oil



Preheat oven to 400°F or 200°C

Mix the teriyaki sauce and cilantro together in a large bowl with the seasonings and then toss the sweet potatoes in the mixture until coated.

Place the sweet potatoes in a large, shallow casserole that has been lightly coated with oil or cooking spray. Reserve any excess sauce.

Bake for about 40 to 50 minutes. Serve with a garnish of cilantro.
