Teriyaki Chicken


1 skinless chicken breast per person

teriyaki sauce (recipe)

olive oil



Pierce the chicken breast with several small slits before covering lightly with teriyaki sauce.
Use a brush or spoon to massage the sauce into the chicken breast.
Cover and refrigerate for at least four hours.

Preheat oven to 350°F or 180°C.
Use a brush to remove excess teriyaki sauce and spritz each chicken breast on both sides with olive oil.
Bake on a grill in an ovenproof dish, brush with oil after 15 minutes and turn.
After 15 minutes or so, turn and brush lightly with oil and teriyaki sauce.
Continue to bake until internal temperature reaches 185°F or 85°C.

Serve on a bed of steamed rice, with stir-fried vegetables.
