Raisin - Pecan Oatmeal Cookies


  • 1/2 cup (120 gm) butter
  • 1/2 cup (120 gm) margarine or shortening
  • 2 tsp (10 ml) pure vanilla extract
  • 3/4 cup (180 gm) white sugar
  • 1/4 cup (40 gm) packed brown sugar
  • 2 large eggs
  • 2 cups (280 gm) quick cooking oats
  • 1½ cups (150 gm) all-purpose flour
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (3 ml) salt
  • 3/4 cup (185 gm) raisins
  • 3/4 cup (60 gm) chopped pecans



Cream the butter and margarine together with electric mixer.
Mix in the sugar and vanilla extract followed by the eggs.
In a separate bowl, combine oats, flour, salt, and baking soda.
Beat the dry ingredients into the creamed mixture.
Stir in the raisins and pecans until well mixed.
Drop the cookie mix onto a baking sheet (greased or covered with parchment paper or Silpat) in rounded tablespoons. (12 to a sheet)
Bake at 375°F or 190°C for about 10 minutes until golden brown and slightly firm.
Makes 36 cookies
