Mandarin Orange Salad


large head of green lettuce, rinsed and torn into bite-sized pieces
3 green onions, sliced finely on the diagonal
1 can (284 ml) mandarin oranges, drained
1/4 cup (125 ml) olive oil
1/4 cup (125 ml) slivered almonds browned in a little butter or oil
2 tbsp (30 ml) balsamic vinegar
1 tbsp (15 ml) sugar
1/2 tsp (3ml) salt
1/4 tsp (1¼ ml) pepper



Prepare the lettuce and combine with the green onions, oranges and the roasted almonds in a bowl.
To make the dressing, combine olive oil, balsamic vinegar, sugar, salt and pepper.
Chill for about an hour before serving, remix dressing before tossing with the salad.
