Baked Macaroni and Cheese


1 small yellow onion, finely diced
5 - 6 mushrooms, chopped
1/2 red pepper, diced
1 package Macaroni and Cheese
2-3 slices ham, diced
2 green onions, chopped
150 grams Mozzarella cheese, grated
Parmesan Cheese to taste



Using a little olive oil, sauté the small yellow onion, and add the mushrooms and red pepper. Set aside.
Prepare the macaroni and cheese according to package instructions but omit the addition of butter.
Add the diced ham and green onion to the onion and mushroom/pepper mixture and mix with the macaroni and cheese.
Add the Mozzarella cheese and mix well, then turn out into a greased quiche dish. Sprinkle with grated Parmesan Cheese to taste.
Bake at 375°F or 190°C for about 20 minutes.
