Italian Pork Chops with Pasta


4 pork loin chops
1 red pepper, cut into strips
2 medium onions, chopped
3 cloves garlic, minced
28 oz can plum tomatoes, (796ml)
14 oz can tomato sauce (400ml)
1/4 tsp (2 ml) ground black pepper
2 tsp (10 ml) dried oregano
salt to taste
1 - 2 tbsp (15-30ml) olive oil
2 cups (200 gm) Cavatappi pasta or spiral macaroni-style noodles (uncooked)



Heat oil in large saucepan and then brown pork chops on both sides and set aside.
Add onions to the pan and sauté, adding the garlic and red pepper and then cooking for a few minutes until tender.
Add canned tomatoes, tomato sauce and seasonings and bring to a boil. Add noodles and then finally add the pork chops and any juices back to the pan.
Cover and simmer for 35 - 40 minutes, stirring occasionally.
