Chinese Fried Rice


  • Approximately 5 cups cold steamed rice (quantity from the above recipe is ideal)
  • 2 large eggs, beaten
  • 1/2 tsp (3 ml) salt
  • 2 tbsp (30 ml) soy sauce
  • 3 green onions, chopped finely
  • 1 cup (240 ml) frozen green peas, thawed
  • 4 tbsp (60 ml) grapeseed or peanut oil



Heat 1 tbsp of oil in a hot wok and pour in the beaten eggs.
Reduce heat to medium and cook for about 2 minutes on each side, then remove to chopping board and cut into thin strips.
Heat the remaining 3 tbsp oil over medium heat until hot and then add the rice, salt, and soy sauce. Cook, stirring constantly until the rice is hot throughout.
Add the peas and the green onions and cook for a couple of minutes more, stirring constantly.
Finally add the egg strips and stir for another minute before serving.
You can keep the fried rice warm in a well-covered casserole in a 170°F or 77 °C oven until ready to serve.
