3 - 4 medium potatoes. peeled 2 carrots, diced 1 medium yellow onion, diced 1 stalk celery, diced olive oil juice of half a lemon 1 tbsp (15 ml) butter 2 tbsp (30 ml) flour 1/4 tsp (1.5 ml) ground black pepper 1 tsp (5 ml) yellow mustard chopped parsley 1/2 tsp (3 ml) salt 2 cups (500 ml) milk 1 cup ( 100 gm) grated Cheddar cheese |
