3 tbsp (45 ml) olive oil
2 cloves garlic, minced
8 green onions, sliced diagonally
1" (2.5 cm) root ginger, peeled and diced
juice of two lemons
2/3 cup (150 ml) water
grated rind of 1 lemon
1 dried red chili pepper, ground
1 tsp (5 ml) turmeric
2 cups (500 ml) coconut milk
1½ lbs (700 gm) cod fillets
Cook garlic and onions briefly in hot oil, add the ginger and fry a little more.
Add the lemon juice and water, lemon rind, chili pepper and turmeric.
Reduce the heat and add the coconut milk.
Add the fish once the mixture comes to the boil and simmer, covered for about twenty minute on low heat.
Garnish with fresh coriander and raisins (if desired).
