28 oz (796ml) can tomatoes or 3 - 4 large fresh tomatoes
1 small onion, chopped
1 hot green chili
1 tsp chili powder (5ml)
1 clove garlic 1 tsp salt (5ml)
1" (2.5 cm) chunk ginger root
1/2 cup ((120 gm) white sugar
1/2 cup (125ml) cider vinegar
1/2 cup golden raisins (125 gm)
Combine tomatoes, all spices, and onion in blender until finely chopped.
Pour into saucepan and add remaining ingredients.
Simmer uncovered until thickened - if you do not reduce the liquids long enough the chutney will be runny.
Store excess in glass jars in refrigerator.
Best made a day or so ahead, but still acceptable if you make it along with your curry, etc.
