Chicken Parmesan


  • 1 boneless chicken breast per person, skin removed
  • 1/2 tsp (3 ml) dry mustard powder
  • 1 cup (100 gm) grated Parmesan cheese
  • 1 tsp (5 ml) parsley flakes
  • salt and pepper to taste
  • 1/2 tsp (3 ml) garlic powder
  • 1/2 cup (125 ml) melted butter
  • 1/2 tsp (3 ml) Worcestershire sauce
  • 1 cup (90 gm) breadcrumbs



Combine the breadcrumbs, cheese, parsley, salt and pepper and garlic powder. Mix well.
Stir Worcestershire sauce, and mustard into the melted butter.
Dip chicken breasts into the butter mixture and then into the breadcrumbs to coat all surfaces.
For a thicker coating, redip the breaded chicken pieces in the butter and then recoat with the crumb mixture. (optional)
Arrange in a single layer in a shallow roasting dish.

Bake at 350°F or 180°C for 45 - 60 minutes.
