Cauliflower au Gratin with Red Peppers


1 cauliflower head, washed and divided into individual florets

1 red pepper, diced

4 green onions, diced

1 cup (140 gm) grated Cheddar cheese

1 cup (80 gm) breadcrumbs

1/2 tsp (3 ml) ground pepper

1/2 tsp (3 ml) salt



Steam the cauliflower and red pepper until tender, drain and arrange in an oven-proof container mixed with the green onion onion.

Mix together the cheese, breadcrumbs, salt and pepper and spread over the vegetables.

Bake at 400°F or 200°C for 15 minutes or so until browned.
