Calzone with Broccoli


fresh-made pizza dough for 12" round crust (can be made using 50% whole wheat flour if desired)
1½ cups partly cooked broccoli florets (375ml)
sliced or diced cooked meat - can be ham, salami, pepperoni or a mixture (200gm)
2 cups grated mozzarella cheese (220gm)
Parmesan cheese
egg glaze
Pizza Sauce:
(enough for 2 Calzones)
1 medium yellow onion
4 cloves garlic, minced
1/2 green pepper, finely diced
5-6 button mushrooms
14 ounce can of tomato sauce (400ml)
1½ tsp dried oregano (8ml)
fresh ground black pepper
olive oil


Prepare the pizza sauce, by sautéing the onion and garlic in a little oil, adding the mushrooms and pepper after two or three minutes. Add the sauce and seasonings and simmer until thick, stirring constantly.
Press and stretch pizza dough in 12" (30cm) round pan. Spread the pizza sauce onto the dough, leaving 3/4" (2cm) around the edges. Arrange the meat on top of the sauce on one half of the crust.  Add the broccoli, followed by the mozzarella cheese. Brush water on the edges and fold the dough over the cheese. Press together to seal the edges using a fork.
Brush the dough with egg glaze and sprinkle on the grated Parmesan cheese.
Bake at 425°F or 220°C for 20 minutes or so until the crust is golden brown and crisp.
