I have used store-bought pita (or naan bread) for the pizza crust and this works very well. You can also make your own dough from scratch (recipe).
After cooling, they can then be stored, covered in plastic, in a refrigerator for a couple of days until required. The crust turns out crispy and browned after final baking with the toppings at 400°F or 200°C for about 10 minutes with the rack at high centre of the oven.
The ingredients you offer your guests are completely up to you, and the advantage is that people can select according to their own likes and dislikes. Additional topping ideas can include pre-cooked bacon, onions, chicken breast, olives, various cheeses and vegetables, fresh basil - in fact anything you can dream of!
Set up the 'Pizza Bar' starting with the pizza crusts, then the pizza sauce(s), meats, vegetables and so on, ending with the cheeses. The prepared pizzas can then be placed on baking sheets or large pizza pans ready for baking. You can identify each person's pizza with a small slip of baking paper or foil with their name written in permanent marker, tucked in beside each pizza. Bake in batches, as directed above, keeping the first pizzas warm if necessary while the others cook.

When making your own pizza dough one batch will yield 8 - 10 pizza crusts. These can be varied in size, especially for a kids' party to allow for different appetities. I prebake the rounds at 350°F or 180°C for about 10 minutes until firm, but not browned, as shown in this photo.
